Nut & Seed Granola
Makes: two large jars
INGREDIENTS
4 cups rolled oats
1/4 cup FreshLife Pumpkin Seeds
1/2 cup FreshLife Sunflower Seeds
1/2 cup FreshLife Natural Almonds
1/2 cup FreshLife Macadamia Nuts
1 tsp sea salt
1/2 tsp cinnamon
1/2 cup coconut oil, melted
1/2 cup honey
1 tsp vanilla extract
1/2 cup FreshLife Shredded Coconut
1/2 cup dried cranberries
1/4 cup dark chocolate chips
METHOD
Preheat the oven to 150 °C. Line a large baking tray with baking paper.
In a large bowl mix the oats, nuts, seeds, salt and cinnamon.
In a heatproof bowl or saucepan, melt coconut oil. Mix honey and vanilla until smooth. Pour over the oats mixture, stir well until it is evenly coated.
Spread the mixture onto the lined baking tray in an even layer.
Bake for 25-30 minutes until golden, stirring thoroughly after the first 10 minutes.
Remove the granola from the oven and set aside to cool.
Once cooled add the coconut, cranberries and chocolate chips. Use a spatula or your hands to mix and break the granola apart.
Store in airtight jars. Use within two weeks.
