Nut & Seed Granola

Makes: two large jars


INGREDIENTS

4 cups rolled oats 

1/4 cup FreshLife Pumpkin Seeds

1/2 cup FreshLife Sunflower Seeds

1/2 cup FreshLife Natural Almonds 

1/2 cup FreshLife Macadamia Nuts

1 tsp sea salt 

1/2 tsp cinnamon 

1/2 cup coconut oil, melted

1/2 cup honey

1 tsp vanilla extract 

1/2 cup FreshLife Shredded Coconut 

1/2 cup dried cranberries

1/4 cup dark chocolate chips


METHOD

  • Preheat the oven to 150 °C. Line a large baking tray with baking paper.

  • In a large bowl mix the oats, nuts, seeds, salt and cinnamon.

  • In a heatproof bowl or saucepan, melt coconut oil. Mix honey and vanilla until smooth. Pour over the oats mixture, stir well until it is evenly coated.

  • Spread the mixture onto the lined baking tray in an even layer.

  • Bake for 25-30 minutes until golden, stirring thoroughly after the first 10 minutes.

  • Remove the granola from the oven and set aside to cool. 

  • Once cooled add the coconut, cranberries and chocolate chips. Use a spatula or your hands to mix and break the granola apart. 

  • Store in airtight jars. Use within two weeks.
