Keto Orange & Almond Shortbread

INGREDIENTS
90g butter, softened
⅓ cup stevia or natural sweetener
Zest of one orange
2 ½ cups FreshLife Almond Flour
50g sugar-free chocolate, melted
METHOD
In a bowl, cream together the butter, stevia and orange zest until light and fluffy.
Add the almond flour, mix until combined, then use your hands to bring the dough together.
Turn the dough out onto a sheet of cling film, then shape into a log and roll tightly. Place into the freezer to chill for 30 minutes.
Preheat your oven to 180 degrees celsius fan bake. Cut the dough into 1cm slices, and arrange on a lined baking tray. Bake for 20 minutes or until golden around the edges, then set aside to cool.
Once the cookies have cooled, drizzle with melted chocolate and place into the fridge until set. Serve and enjoy or keep stored in an airtight container.
