Keto Orange & Almond Shortbread

INGREDIENTS

90g butter, softened

⅓ cup stevia or natural sweetener

Zest of one orange

2 ½ cups FreshLife Almond Flour

50g sugar-free chocolate, melted


METHOD

  • In a bowl, cream together the butter, stevia and orange zest until light and fluffy.

  • Add the almond flour, mix until combined, then use your hands to bring the dough together.

  • Turn the dough out onto a sheet of cling film, then shape into a log and roll tightly. Place into the freezer to chill for 30 minutes.

  • Preheat your oven to 180 degrees celsius fan bake. Cut the dough into 1cm slices, and arrange on a lined baking tray. Bake for 20 minutes or until golden around the edges, then set aside to cool.

  • Once the cookies have cooled, drizzle with melted chocolate and place into the fridge until set. Serve and enjoy or keep stored in an airtight container.
