Keto Caramelised Onion & Feta Tart

INGREDIENTS
200g FreshLife Almond Flour
70g grated parmesan cheese
60g butter, chilled
5 large eggs
2 onions, finely sliced
1 Tbsp balsamic vinegar
1tsp stevia or natural sweetener
¾ cup cream
¼ cup chopped fresh herbs*
80g feta cheese
*we used a combination of thyme, parsley and rosemary in our tart
METHOD
In a food processor, pulse the almond flour, parmesan, butter and seasoning until the mixture resembles breadcrumbs. Add one egg, and pulse until a soft dough forms.
Between two sheets of baking paper, roll the dough into a large enough circle to fit a 25cm tart tin. Transfer to the dish, then press into the tin and trim the edges. Place into the fridge and leave to chill.
Place a frying pan over low-medium heat with a drizzle of olive oil. Sauté the onions while stirring for 15 minutes, or until caramelised and tender. Stir in the balsamic and stevia, and season to taste. Leave to cool slightly.
Preheat your oven to 180 degrees celsius fan bake. Spoon the onions into the base of the tart tin. In a bowl, whisk together the remaining eggs, cream and herbs. Season with salt and pepper, then pour over the onions.
Crumble the feta over the egg mixture, then bake for 30-35 minutes or until the filling has set. Serve warm, or leave to cool before refrigerating and enjoy cold.
