Gluten & Dairy Free Frosting

Perfect for topping a Christmas Fruit Cake or Cupcakes

Makes enough to cover 1 cake or 12 cupcakes


INGREDIENTS

150g vegan butter, softened (we like Naturli)

2 cups (300g) gluten free icing sugar, sifted

½ tsp vanilla extract (if desired)

2-3 Tbsp approx. dairy free milk, hot water or liquor of your choice(if desired)


METHOD

  • In a large bowl, beat the butter using an electric hand mixer until light and fluffy.

  • Gradually add the icing sugar, ½ cup at a time, beating well after each addition.

  • If desired, add the vanilla and beat well.

  • If desired, gradually add the milk, hot water or brandy to achieve the desired consistency.

  • Swirl or pipe over your cooled cake or cupcakes and decorate with fresh seasonal fruits, chopped nuts or sprinkles.
