Raw Choc, Hazelnut & Peanut Slice

Makes: 1 slice approx 18 x 27cm


INGREDIENTS

Base

FreshLife Silver Platter Medjool Dates, pitted

½ cup FreshLife Raisins

½ tsp cinnamon

½ cup boiling water

½ cup FreshLife Natural Hazelnuts

1 cup FreshLife Desiccated Coconut

1 cup FreshLife Ground LSA + Chia

4 tbsp coconut oil, melted

 

Filling

1 cup smooth peanut or almond butter

2 tbsp coconut oil - melted

1 tablespoon maple syrup

 

Topping

1½ cups dark chocolate, broken into pieces

1 tbsp coconut oil

A handful of chopped FreshLife Natural Hazelnuts and/or Desiccated Coconut


METHOD

  • Combine the dates, raisins, cinnamon and boiling water and mix well. Allow to soak for 5 minutes, then drain off excess liquid and set aside.

  • In the food processor combine the hazelnuts and coconut and pulse until finely chopped then add the date mixture, LSA + Chia and coconut oil and whizz until well mixed and clumping together.

  • Using the back of a spoon, press the mixture into a lined tin approx. 18 x 27cm or similar and chill for 15 minutes while preparing the filling.

  • Mix the peanut butter with the melted coconut oil and maple syrup until smooth. Pour over the chilled base and spread out evenly then chill for 1 hour.

  • Melt the chocolate and coconut oil in a bowl in the microwave for 20 second intervals, stirring until smooth (or heat over a double boiler).

  • Pour the chocolate over the peanut butter layer and tilt the tray to coat the top evenly. Sprinkle the top with extra hazelnuts and/or desiccated coconut and chill for at least 2 hours before cutting into bars or squares.
