Almond & Cranberry Granola Bars

Makes approx: 10 snack-size bars


INGREDIENTS

1½  cups rolled oats

200g FreshLife Silver Platter Medjool Dates, pits removed, roughly chopped

1 cup FreshLife Natural Almonds, chopped

¼ cup cranberries 

1 tbsp black chia seeds

¼ cup maple syrup

¼ cup smooth peanut butter


METHOD

  • Preheat oven to 180°C (160 °C fan bake). Line a 20x20cm square tin with baking paper.

  • Spread the oats over a baking tray and toast for 10-15 mins or until light golden brown in colour. Remove from the oven and cool.

  • Place the dates in a food processor and process well, or until a sticky ball of finely chopped dates forms in the bowl.

  • Place the oats, almonds, dates, cranberries (or chocolate chips) and chia seeds in a separate bowl.

  • Warm the maple syrup and peanut butter in a small saucepan over a low heat. Pour over the oat mixture and mix all the ingredients together well.

  • Tip the mixture into the tin and press down firmly and evenly (to approximately 2cm thick).

  • Cover and refrigerate for 20 mins to allow the mixture to firm up.

  • Remove from the tin and cut into whatever bar size your desire. The bars will keep in an airtight container for 2-3 days. 

    TIP: You can use any dried fruit in place of cranberries, why not try sultanas or raisins?
