Parmesan Oat & Seed Crackers
Makes: 20-30 pieces approx.
INGREDIENTS
½ cup FreshLife Pumpkin Seeds
½ cup FreshLife Sunflower Seeds
⅓ cup FreshLife Sesame Seeds
⅓ cup FreshLife Black Chia Seeds
⅓ cup linseed (flaxseed)
1 cup rolled oats
¾ cup all purpose white flour
2 tsp salt
1 cup parmesan cheese, grated
½ cup rice bran oil
1 cup cold water
METHOD
Preheat oven to 170°C.
Mix all seeds, rolled oats, sifted flour, salt and parmesan cheese in a bowl, then add the oil and water and mix together well.
Cut two sheets of baking paper, each the length of your baking tray.
Tip ⅓ of the mixture onto one of the sheets. Place the second sheet on top of the mixture and using a rolling pin, roll out as thinly as possible (to around 3 – 4mm thickness). Remove top layer of baking paper and trim the edges of the mixture to form a large rectangle.
Repeat with the remaining mixture as required.
Place on baking tray (with baking paper underneath) and bake for approximately 20 minutes or until crisp and golden.
Remove from oven and slice into 5cm squares. Place on wire rack to cool.
Serve as soon as they are cool or store in an airtight container.
TIPS: If some crackers are still a little soft, return them to the oven to crisp up.
