LSA & Chia Muffins

Serves: 10-12 muffins
INGREDIENTS
1 cup FreshLife LSA + Chia
1 cup FreshLife Ground Almonds
1 tbsp baking powder
1 tsp ground cinnamon
¼ tsp salt
113g butter, softened
4 large eggs, lightly beaten
½ cup sugar
½ cup water
2 tbsp sliced almonds (optional)
METHOD
Pre-heat oven to 175°C.
Line a 12-cup muffin pan with paper muffin liners.
Combine the LSA+Chia, ground almonds, baking powder, cinnamon and salt in a large mixing bowl.
Add the softened butter, eggs, sugar and water to the dry ingredients and beat together until the ingredients are just blended.
Spoon the mixture into the prepared muffin pan. Add a sprinkle of sliced almonds to each muffin, if using.
Bake in the oven for 20-25 minutes or until a toothpick inserted into the centre of a muffin comes out clean. Allow to completely cool before serving.
