Honey Coconut Macadamia Granola

 

This Honey Coconut Macadamia Granola is super easy to make and full of goodness, and the perfect combination of sweetness and crunch. 


Makes one large jar


INGREDIENTS

2 cups FreshLife Macadamia Nuts, roughly chopped 

1 cup FreshLife Pumpkin Seeds

1 cup FreshLife Slivered Almonds

1 cup FreshLife Coconut Chips

3 tbsp honey 

½ cup FreshLife Black Chia Seeds  

⅔ cup FreshLife Dried Blueberries

½ cup FreshLife Whole Cranberries

2 cups oats 

METHOD

  • Preheat oven to 180°C bake. 

  • In a large non-stick frying pan, dry roast (using no oil or butter) the pumpkin seeds, almonds and macadamia nuts over a low heat until pumpkin seeds begin to pop.

  • Add oats and coconut, stirring constantly until oats have slightly browned.

  • Put all ingredients from frying pan into an oven tray lined with baking paper. Drizzle over honey  and mix well to combine.

  • Place in oven for 10 – 15 minutes, or until mixture is a light golden brown. Check and stir well every 5 minutes to ensure the mixture doesn’t burn. 

  • Remove from oven and stir through chia seeds and dried fruit. 

TIP: Serve with fruit, milk and/or a tablespoon of yoghurt if desired – or just snack on it by the handful!
