Gluten & Dairy Free Frosting
Perfect for topping a Christmas Fruit Cake or Cupcakes
Makes enough to cover 1 cake or 12 cupcakes
INGREDIENTS
150g vegan butter, softened (we like Naturli)
2 cups (300g) gluten free icing sugar, sifted
½ tsp vanilla extract (if desired)
2-3 Tbsp approx. dairy free milk, hot water or liquor of your choice(if desired)
METHOD
In a large bowl, beat the butter using an electric hand mixer until light and fluffy.
Gradually add the icing sugar, ½ cup at a time, beating well after each addition.
If desired, add the vanilla and beat well.
If desired, gradually add the milk, hot water or brandy to achieve the desired consistency.
Swirl or pipe over your cooled cake or cupcakes and decorate with fresh seasonal fruits, chopped nuts or sprinkles.
