Cranberry & Macadamia Rocky Road

 

Makes:  30 pieces approx.


INGREDIENTS

250g good quality dark chocolate

150g milk chocolate

175g butter

¼ cup golden syrup

200g rich tea biscuits

80g cranberries (whole or sliced)

70g FreshLife Macadamias

125g mini marshmallows

1 tbsp icing sugar

METHOD

  • Grease and line with baking paper a 22cm x 28cm slice tin.

  • Place the dark and milk chocolates, butter and golden syrup in a heatproof bowl over a saucepan of simmering water (ensuring the base of the bowl does not touch the water), and melt, stirring occasionally.

  • Place the biscuits in a sealed plastic bag and lightly crush with a rolling pin. Place in a large bowl with the cranberries and FreshLife Macadamias, and the marshmallows.

  • Pour over the chocolate mixture and mix to combine. Pour into the prepared tin, leave to set a little, then cover and place in the fridge to completely set for at least 3 hours or preferably overnight.

  • When set, cut into small pieces and keep in a covered container in the fridge.

  • Before serving, sieve a little icing sugar over the top of the Rocky Road pieces.
