Choc Seed Crunch Bars
Super easy to make, these bars are a yummy and nutritious snack for the kids to enjoy these school holidays.
Makes: 16 bars
INGREDIENTS
150g rolled oats
70g FreshLife Slivered Almonds
80g FreshLife Pumpkin Seeds
100g liquid honey
75g peanut butter, smooth (or crunchy)
¼ tsp salt
2½ tbsp milk chocolate chips
METHOD
Preheat oven to 160°C (140°C fan-forced). Grease and line the base and sides of a 20cm square tin with baking paper and set aside.
Line a baking tray with paper. Place the rolled oats, pumpkin seeds and slivered almonds on the tray. Bake for approx. 10 minutes until lightly toasted. Tip into a large heatproof bowl and stir in the salt.
Place the honey and peanut butter in a heatproof bowl and microwave for 30 seconds on high. Stir to combine. Pour over the toasted oat mixture and combine thoroughly.
Tip into the prepared square tin and use a metal spoon to press the mixture in firmly and evenly. Allow to cool slightly.
Scatter the chocolate chips over the top. Cover with a sheet of baking paper and press down firmly with your hands to push the chocolate chips in.
Bake for 20 mins or until a light golden brown. Remove from the oven and leave to cool for 10 minutes.
Remove from the tin and cut into 16 square bars.
