Chicken Schnitzel with Crunchy Cornmeal & Macadamia Crust

Makes:  6 medium sized schnitzels


INGREDIENTS

1 cup FreshLife Cornmeal Flour

¾ cup FreshLife Macadamias or Natural Cashews

1 tsp celery salt

½ tsp turmeric

½ tsp garlic powder

1 tbsp chopped fresh rosemary

2 eggs, beaten

1 cup FreshLife Cornmeal Flour

3 chicken breasts

Olive oil or canola oil for frying

METHOD

  • In the food processor combine the first measure of cornmeal, and macadamia nuts and pulse until the nuts are very finely chopped, then add the celery salt, turmeric, garlic powder and fresh rosemary and mix well.

  • In a separate bowl add the eggs and beat well.

  • In a third bowl place the remaining cup of cornmeal.

  • Pre-heat the oven to 185°C.

  • Slice each chicken breast into 2 even sized schnitzels so you now have 6 thin chicken steaks.

  • Dip each chicken steak firstly into the plain cornmeal until coated, then into the beaten egg and finally into the crunchy cornmeal & macadamia nut mix, tossing to coat each one evenly.

  • Heat a little oil in a non-stick frying pan and sear each chicken schnitzel until golden on both sides, transfer to a lined baking tray and cook in the oven for a further 8-10 minutes or until cooked through.

  • Serve the crunchy chicken schnitzels with seasonal vegetables and your favourite sauce or chutney.
