Avocado & Pine Nut Dip
INGREDIENTS
70g FreshLife Pine Nuts, lightly toasted
1 large avocado, chopped
1 large handful fresh basil leaves
2 garlic cloves
2 tbsp extra virgin olive oil
¼ cup Parmesan, finely grated
3 tbsp lemon juice
Salt & pepper to taste
METHOD
Process all the ingredients apart from 2 tbsp pine nuts & Parmesan, in a food processor until you reach a desired consistency.
Season to taste.
Stir through the reserved Parmesan and top with the remaining Pine Nuts.
Serve with toasted pita bread or veggie sticks.
