Almond and Tahini Biscuits

INGREDIENTS

½ cup FreshLife Sesame Seeds

1½ cups FreshLife Almond Flour

½ tsp baking soda

¼ tsp salt

⅓ cup honey

⅓ cup tahini

1 tsp vanilla extract

METHOD

  • Preheat the oven to 175°C (bake) and line two baking trays with baking paper.

  • Whisk together the almond flour, baking soda and salt in a bowl and set aside.

  • In a separate bowl, mix together the honey, tahini and vanilla extract. Add the dry ingredients to the wet ingredients and stir until well combined.

  • Tip the sesame seeds onto a pie dish or large plate.

  • Using your hands, roll the dough into approx. 16 balls, then roll in the sesame seeds. Flatten each ball to approx. 1 cm thickness, then transfer to the baking trays, ensuring the biscuits have room to spread during baking.

  • Bake the biscuits for approx. 8 minutes or until the bottoms are golden.

  • Allow to cool on the trays for 5 minutes before transferring to a rack to cool completely.
